Any remarkable chef will tell you that the most important piece to the cooking puzzle is their mise en place - having their things in place.  At H COLE we call it "Having Our Shit Together" which isn't always easy building a boot strapped non-traditional catering company.  The second most important piece you might think are the ingredients - while incredibly important - it's the tools in our kits and in our brains.  We will kick off 2026 COOK Club with the foundation you’ll need to feel confident in the kitchen - Knife Skills.  The class will start with cardboard and plastic knives and a lesson in body mechanics.  You'll then get some serious steel in your hands and learn all the proper techniques to brunoise, julienne, chiffonade and all of those other little fancy french terms for cutting and chopping your food.  The foundation of this class will pop up over and over throughout the entire COOK Club series.  We have strict "No Knives with Wine" rule in our kitchen and that will apply to our first class.  But don't fret, you'll be able to wipe your tears from chopping onions over a beautiful family style Mexican Meal complete with the Pico De Gallo we’ll make together in class, perfectly paired with our favorite Natural Party Wines + Local Beers.
